BURNT SUGAR ICING 
2 c. sugar
1 c. half & half cream
1 tbsp. sugar

Brown 1 tablespoon sugar in a pan, add cream and other sugar, stir well. Boil until thick. Soft ball stage. When almost cool, beat and spread on cake.

My grandmother used to make banana cake & put a burnt sugar icing on it too but hers was different, I don't remember the cream in it, what I remember is she just melted brown sugar in butter in a pan with Maplene and cooked it til it was at the hard crack stage then spread it on the cake. When they came to Kansas they passed through Iowa an Ohio, grandma was born in Fort Madison, Iowa and I think they got a lot of Amish influence in their cooking. That's the potato salad we grew up with. She could make killer chicken pot pie.
