WALDORF SALAD CAKE 
3 c. flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
2 lg. eggs
1 1/2 c. sugar
1 tsp. vanilla
1 c. real mayonnaise, not imitation
1/2 c. milk
3 c. unpeeled, diced (about 1/4 inch) red apples
1 c. coarsely chopped walnuts
1/2 c. finely diced celery

Grease and flour a 12 cup fluted tube pan, about 9 x 13 inches. In a bowl, stir together flour, baking soda, salt and cinnamon.

In a large bowl, using an electric mixer at high speed, beat the eggs, sugar and vanilla until fluffy. At low speed, beat in the mayonnaise. Gently beat in the flour mixture in 4 additions, beginning and ending with the flour. Gently stir in apples, walnuts and celery. Turn into prepared pan.

Bake in preheated 350 degree oven until cake tester inserted in center comes out clean -60 to 70 minutes. Cool in the pan on a wire rack for 20 minutes. Loosen edges and turn on rack to cool completely.
