SCALLOPED POTATOES 
3 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
2 c. skim milk
3 1/2 to 4 c. thinly sliced potatoes
2 tbsp. minced onion
1 c. ham (optional)
1/2 c. shredded sharp cheese

Microwave butter in 1 quart measuring cup for 1/2 minute. Blend in flour and seasonings. Gradually stir in milk. Microwave at high 8-10 minutes, stirring after 4 minutes. Layer half of potatoes, onions, and sauce in greased 2 quart casserole. Repeat layers. Cover. Microwave at high 17 to 19 minutes. Remove from oven and let stand 5 minutes before serving. Sprinkle on sharp cheese after cooking. Makes 4 to 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
