SUZI WATER'S LOW-CAL FIESTA FISH AND SHELLS | |
1 (11 1/2 or 12 oz.) pkg. frozen fish portions (individual wrapped) 1 c. tiny shell macaroni 1 (16 oz.) can tomatoes, cut up 1/2 c. chopped onion 1/2 (1 1/4 oz.) pkg. taco seasoning mix 1 med. green pepper, cut in strips 1/4 c. (1 oz.) shredded Cheddar cheese Allow frozen fish to stand at room temperature for about 20 minutes. Meanwhile, cook macaroni according to package directions; drain. In medium saucepan, stir together undrained tomatoes, onion, and taco seasoning mix. Add macaroni and green pepper strips; bring just to boiling. Pour mixture into a 6x10x2 inch baking dish. Fold each fish portion as necessary to fit in pan; place over mixture. Spoon some of sauce over fish. bake in 350 degree oven for 35 minutes covered. Uncover, sprinkle cheese over dish. Bake 5 more minutes. Makes 4 servings. |
