HAM & CAULIFLOWER CASSEROLE 
1 lb. (or head) fresh cauliflower (or 1 pkg. frozen)
1 1/2 - 2 c. diced ham (may substitute Spam)
9 oz. shredded cheese
8 oz. light sour cream
1 c. milk
3 tbsp. butter + 1/3 c. flour
1/2 c. dried bread crumbs

Cook cauliflower and drain. Add diced ham; set aside in casserole dish. Make a basic white sauce with 2 tablespoons butter, melted and 1/3 cup flour; add milk and sour cream using a whisk to blend smoothly. Stir over medium heat, adding cheese slowly until completely melted. Pour over ham and cauliflower mix together. Use remaining 1 tablespoon butter, melted and mix with bread crumbs. Sprinkle over top. Bake at 350 degrees for 45 to 50 minutes.
