ZUCCHINI WITH BACON 
1 1/2 lbs. firm zucchini
1/3 c. extra virgin olive oil
1 1/2 c. onion, sliced very thin
1/4 lb. bacon, cut into strips 1/8 inch wide
Salt
Black pepper

1. Soak zucchini in water for 20 minutes - scrub skin - trim away both ends and slice zucchini into disks about 1/4 inch wide.

2. Choose a lidded saute pan that can accommodate all the zucchini. Put in the olive oil, onion and bacon - turn heat to medium high. Cook stirring from time to time, until the onion becomes colored a pale gold.

3. Add the zucchini, turn once or twice, turn down heat to medium, cover the pan. Cook for 12-15 minutes, uncover the pan, add salt and pepper to taste and cook for another 2 to 3 minutes in the uncovered pan, stirring frequently. Can be prepared ahead of time and reheated.
