SALMON WITH CUCUMBER 
1 can red salmon
1 med. size cucumber
1 loaf white bread, sliced

Clean bones and skin from salmon; mash. Slice the cucumber in 1/4 inch slices and marinate a few minutes in a little salt and vinegar. Drain.

Cut rounds of bread slightly larger than cucumber slices. Butter lightly. Place cucumber slice on bread and top with salmon. Chill.

Garnish with small pieces of parsley.
