HASH BROWN CASSEROLE 
1 (2 lb.) bag hash brown potatoes
1/2 c. butter, melted
Salt & Pepper to taste
1/2 c. fine chopped onion
1 can cream of chicken soup
8 oz. sour cream
2 c. sharp cheddar cheese, grated
2 c. Ritz cracker crumbs, crushed fine

Thaw potatoes, mix all ingredients well in large bowl. Put in 9"x13" buttered dish. Mix topping (1/2 cup melted butter with 2 cups Ritz cracker crumbs, crushed fine). Place mixture on top of potatoes. Bake at 350 degrees for 50 to 60 minutes.
