SANTE FE CHICKEN 
Boneless, skinless chicken breasts (1 per person)
Lowfat Italian or Caesar salad dressing
Sliced mozzarella or Swiss cheese (1 slice for each chicken breast)
Chopped fresh Roma tomatoes
Chopped green onion tops
Small can chopped black olives

Marinate chicken breasts in salad dressing overnight or for several hours. Grill one side; turn and top with cheese slice. Arrange cooked chicken (cheese side up) on a serving platter. Top with tomato, green onion and a few olives. Makes a colorful and healthy serving!
