DIVINITY FUDGE | |
5 c. white sugar 1 c. white syrup 1 1/2 c. water 2 egg whites 1/8 tsp. salt 1 1/2 tsp. vanilla 1/2 c. red or green candied cherries Nuts (opt.) Combine white sugar, white syrup and water. Bring these ingredients to a rolling boil and continue boiling to 238 degrees. Let stand for five minutes. Beat the egg whites and salt together until stiff but not dry. Pour the syrup over the egg whites and continue beating until mixture becomes dull in finish. Add 1 1/2 teaspoons vanilla and 2 cups chopped nut meats (if desired) and/or candied cherries. Do not add vanilla, nut meats or cherries until candy is ready to be dropped on wax paper or spread in a 12"x15" pan as this causes the divinity to become oily and it will not set. This recipe makes approximately two pounds. |
