SPINACH PIE | |
1 (9 inch) frozen pie shell 1 (10 oz.) pkg. frozen chopped spinach 8 oz. Cheddar cheese, shredded 16 oz. sm. curd cottage cheese 1 med. onion, chopped 3 eggs, beaten 3 tbsp. flour 3 tbsp. butter Melt butter in large saucepan; add flour to thicken. Add beaten eggs and stir constantly to form a thick custard. Remove from heat. Add spinach and onion (spinach should be thawed and squeezed dry - do not cook). Add the Cheddar cheese and cottage cheese. Pour into unbaked pie shell. Bake for 1 hour at 350 degrees. |
