SAUSAGE AND SPINACH PIE 
1 lb. sweet Italian sausage
6 lg. eggs
2 pkg. (10 oz. each) frozen spinach, thawed & drained well
4 c. shredded mozzarella cheese
2/3 c. ricotta cheese
9" pie crust with top

Brown sausage and drain. Reserving 1 egg yolk, beat remaining eggs with sausage, spinach and cheeses. Pour into pie crust. Put on top crust. Cut vents. Mix reserved egg yolk and 2 teaspoons water and brush on top of pie. Use crust scraps to make leaf decorations. Bake at 350 degrees for 1 hour and 15 minutes.
