ENCHILADAS 
1 lb. hamburger, browned and drained
1 onion, chopped
4 hard boiled eggs, chopped
1 lb. Cheddar cheese or Monterey Jack, shredded
1 can sliced olives
1 pkg. corn tortillas
1 to 2 cans enchilada sauce
1 lg. Pyrex casserole dish lined with
Enchilada sauce on bottom

Dip corn tortillas in hot enchilada sauce. Add at one end of tortilla 2 to 3 teaspoons hamburger, chopped onion, olives, eggs, plenty of cheese, roll place seam side down in Pyrex dish. Bake at 350 degrees approximately 30 minutes. Serves 6-10.
