CRISPY WAFFLES 
2 beaten egg yolks
2 c. buttermilk
1/3 c. salad oil
2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tbsp. sugar
2 stiff beaten egg whites

Combine egg yolks, milk and salad oil; add flour sifted with salt, baking powder, soda and sugar. Beat well. Fold in egg whites. Bake in hot waffle iron. Makes 6 waffles.

This recipe originated in North Carolina, and I have used it for years. We like chopped pecans added on top o the batter before you bring the waffle iron lid down. Be sure to warm the syrup you use. Nothing is a greater insult to good waffles than cold syrup.
