VEGETABLE HORS D' OEUVRES 
2 c. cottage cheese
1/4 c. skim milk
1 tsp. salt
1 tbsp. chopped chives
1 tomato, peeled and chopped
1/2 c. crumbled blue cheese
Cauliflowerets
Celery
Sliced scored cucumber
Carrot curls
Sliced mushrooms

Combine the cottage cheese and milk in the container of electric blender, covering and processing at high speed until the blend is smooth and creamy. Transfer the blend to a mixing bowl. Add the salt, chives, tomato, and blue cheese, mixing well. Chill until serving time. Garnish with additional chopped tomato and chives just before serving. This makes about 2 1/2 c. of dip. Prepare and serve vegetables such as cauliflower (broken in flowerets), celery sticks, cucumber slices, carrot sticks or curls, sliced mushrooms, or any others of your choice, in any quantity desired. Store the dip in the refrigerator between uses.
