SALMON CROQUETTES 
2 tbsp. butter
1/3 c. flour
1 c. milk
Salt and pepper to taste
1 3/4 c. cooked or canned salmon
1 tsp. lemon juice
Cracker crumbs
1 egg, beaten

Make a white sauce of the butter, flour and milk. Add salt and pepper, salmon and lemon juice. Shape into croquettes. Dip in fine cracker crumbs, roll in beaten egg, and again in the crumbs. Fry in 1/4 inch shortening until delicately brown.
