RITA'S CHICKEN 
Chicken breasts
Flour
Salt
Pepper
Oil for frying
1/3 c. soy sauce
1/3 c. honey
2 tbsp. fresh ground ginger root

Wash chicken breasts, debone and skin each piece. Coat chicken breasts with seasoned flour. Fry in oil until lightly brown, turning frequently.

Combine soy sauce, honey and ground or chopped ginger root in saucepan. Heat through. Heat oven to 350 degrees.

When chicken is lightly browned, dip each piece in soy sauce-honey mixture and place on broiler-type pan. Bake 10 minutes, turn each piece and baste well. Bake another 10 minutes and serve.
