STEWED CHICKEN OVER RICE 
2 cans tomato paste
2 lb. chicken parts, your desire
1 green pepper
1 onion
1 c. chopped celery
1 1/2 c. rice

Clean chicken. Put in medium size pot. Add water until chicken is covered. Boil down until chicken seems tender or until it appears to be falling off the bone. Drain excess water leaving 1 cup. Add tomato paste, chopped green pepper, chopped onion, and chopped celery. Return to boil, then turn down to simmer for 15 minutes. Cook rice. Remove from fire. Serve on top or side of rice. My family likes it on the top. Serves 6.
