QUAIL SUPREME 
6 quail
Pepper
1 sm. onion, chopped
Water
Salt
Flour
Butter

Split quail down back. Salt, pepper and flour heavily. Place in shallow pan. Spread onion over quail. Dot generously with butter. Pour 1/2 inch water into pan and cover with foil or lid. Bake at 350 degrees for about 2-3 hours or until tender. Lift foil at intervals to baste. Add water as needed. Remove foil and place quail under broiler to brown. Wine may be used in baking instead of water, if desired. Serves 3.
