SMOTHERED QUAIL 
12 quail or 6 doves
6 tbsp. butter
3 tbsp. flour
2 c. chicken broth
1/2 c. sherry
Salt and pepper to taste
COOKED RICE

Season quail or dove with salt and pepper. Brown in a heavy skillet with butter. Remove meat, add the flour to the butter and stir well. Slowly add chicken broth, sherry, salt and pepper. Blend well. Put meat in a large casserole dish and pour ingredients over it. Cook for 1 hour in 350°F oven or until done. Serve with rice.
