BLUEBERRY-ORANGE NUT BREAD | |
3 c. sifted flour 3/4 c. granulated sugar 3 tsp. baking powder 1/4 tsp. baking soda 1 tsp. salt 3 eggs 1/2 c. milk 1/2 c. butter, melted 1 tbsp. grated orange peel 2/3 c. orange juice 1 c. fresh or frozen blueberries 1/2 c. chopped walnuts Sift together flour, sugar, baking powder, baking soda and salt. Beat together eggs, milk, melted butter, orange peel and juice. Stir liquid ingredients into dry ingredients just until dry ingredients are moistened. Fold in blueberries and nuts. Pour into greased 5 x 9 x 3-inch loaf pan and bake at 350 degrees for 60 to 70 minutes. Remove from pan and cool. Wrap in foil to store. Yield 1 loaf. |
