ENCHILADA CASSEROLE 
1 1/2 lb. lean ground beef
1 clove garlic, minced
1 tsp. salt
1 pkg. enchilada mix
1 c. olives
15 oz. can tomato sauce
Refried beans
Ortega chilies, chopped
Cheese

Brown ground beef. Add garlic, salt, onion and saute together until onion is soft and meat is done. Mix enchilada mix with tomato sauce. Quarter 5 tortillas in bottom of a 9 x 13 inch baking dish. Add layer of refried bean, layer of meat mixture, layer of Ortega chilies, chopped, layer of cheese sauce. Repeat layers and top of cheese and sliced olives.
