MICROWAVE SQUASH CASSEROLE 
2 lbs. yellow squash, sliced thin
1/2 c. mayonnaise
1 egg, beaten
1/2 c. cheddar cheese
2 tbsp. butter
1/2 c. diced onion
Salt and pepper to taste

TOPPING:

1/4 c. crackers
2 tbsp. butter

Microwave squash 8 to 10 minutes (until soft). Add other ingredients and microwave 5 minutes more. Add topping and microwave 2 more minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
