ZUCCHINI CASSEROLE 
2 c. grated zucchini
2 sm. onions, chopped
1 box chicken Stove Top dressing
1 can cream of chicken or mushroom soup
2 c. grated Cheddar cheese (save 1/2 c. for topping)
1 c. sour cream
1/2 c. melted butter
2 oz. chopped pimento
1 can sliced water chestnuts (optional)

Heat oven to 350 degrees. Mix all ingredients. Place in buttered 9x13 inch casserole dish. Cover with 1/2 cup cheese. Bake 30 or 40 minutes.
