GREEK CHICKEN SALAD 
3 c. cubed chicken breasts, cooked
2 med. cucumbers, chopped
1 1/4 c. crumbled feta cheese
2/3 c. sliced ripe olives
1/4 c. chopped parsley
1 recipe Aioli
1/2 c. plain yogurt
1 tbsp. oregano
Lettuce leaves

Combine first 5 ingredients; set aside. In small bowl combine Aioli, yogurt and oregano; add to chicken mixture. Mix, cover and chill. Serve on lettuce.

AIOLI RECIPE:

In food processor combine: 2 tbsp. lemon juice 3 cloves garlic 1/2 tsp. salt & pepper

Cover and mix for 5 seconds. Slowly add 1 cup salad oil, blending until smooth and thick.
