WHOLE GRAIN BREAD 
1 yeast cake
2 c. lukewarm water
5-6 c. 100% whole wheat flour
1/2 c. wheat germ
3/4 c. soy flour
1 tbsp. salt
3 tbsp. oil
2-3 tbsp. honey

Dissolve yeast in 1/4 cup warm water, set aside. In large bowl combine water, soy flour, wheat germ, salt, oil, and honey. Add yeast. Mix well and add enough whole wheat flour to make dough easily handled. Let rest 10-12 minutes then knead to work gluten. Let double in bulk, punch down, let it raise again and form into loaves. Let raise and bake at 425 degrees for 10 minutes, then reduce heat to 350-375 degrees for 45 minutes. Turn out and cool on wire rack.
