RICOTTA CAKE 
2 lb. Ricotta cheese
3/4 c. sugar
3 eggs, slightly beaten
1 yellow or lemon cake mix with pudding
powdered sugar

Mix together Ricotta cheese, sugar and eggs. Prepare cake mix according to package directions. Pour into greased and floured 9 x 13 baking pan. Carefully spoon Ricotta mixture over batter.

Bake at 350°F 60 to 65 minutes, or until done. Cool on rack. Sprinkle with powdered sugar and serve.
