EASY CRANBERRY CHICKEN 
1 (6 1/2 oz.) pkg. UNCLE BEN'S® fast cooking long grain rice
2 chicken breasts, boned and skinned
3 tbsp. butter
2 tbsp. soy sauce
1 tbsp. lemon juice
1 (16 oz.) can whole berry cranberry sauce
1 tsp. brown sugar

Spray a 12x8 inch baking dish with PAM. Sprinkle rice and include seasoning packet in dish. Place uncooked chicken pieces over rice. In saucepan warm cranberry sauce, butter, soy sauce, lemon juice and sugar. Pour over chicken. Cover with foil. Bake in 325 degree oven approximately 1 hour. Serves 4.

I've always made this without the brown sugar. You don't need it, the cranberry sauce provides all the sugar you need plus this original recipe doesn't call for sugar. I just love this recipe!! My family likes more rice and sauce. So, I put a total of 2 boxes of rice and 2 cans of cranberry sauce.
