EGG DROP DUMPLING
1 1/4 c. flour
2 3/4 tsp. baking powder; optional
1/2 tsp. salt
1 egg, slightly beaten
1/2 c. milk

Sift flour, measure and re-sift 3 times with baking powder and salt. Mix milk and egg; add all at once to flour mixture. Mix lightly with fork until ingredients are just dampened, but not smooth. Drop by spoon onto boiling stew. Cover and let boil for 12 minutes. Makes about 12 dumplings.

Oh, so good when made without baking powder and dribbled into boiling split pea soup. (Small amount from the end of a teaspoon.)
