6 med. sweet potatoes
1 1/2 c. sugar
1/4 c. buttermilk
1 tbsp. salt
1 1/2 c. flour

Boil sweet potatoes and drain. Stir in all other ingredients and mix until mixture in sort of stiff. (If you need, you can add a little more flour.) Spray cookie sheet with Pam. Drop onto cookie sheet (approximately 1 large tablespoon full at a time.) Bake on 400 degrees until done, about 25 minutes.
