WHITE FRUIT CAKE 
1 1/2 c. shortening
1 1/2 c. sugar
8 eggs
1 1/2 tsp. rum flavoring
2 1/4 c. flour
2 1/4 tsp. baking soda
3/4 c. unsweetened pineapple juice
1 1/8 lb. mixed fruit (candied)
1 1/4 c. candied cherries
1 1/2 c. pineapple, drained
3/4 c. dates
3/4 lb. white raisins
3/4 c. flour
3 c. coconut
3 c. walnuts

Mix shortening, sugar, eggs, rum flavoring, flour, baking soda and unsweetened pineapple juice together. Mix the mixed fruit, candied cherries, pineapple, dates, raisins and flour together. Combine the two mixtures together and add the coconut and walnuts. Mix all together. Pour into greased bread loaf pans.

Bake at 275°F for 2 1/2 hours.

Makes approximately 3 to 4 loaves.
