FRUIT - N' CHEESE RING 
1 #2 can (2 1/2 c.) crushed pineapple
1 (3 oz.) pkg. lemon gelatin
1 c. hot water
1/2 c. mayonnaise or salad dressing
1 (5 oz.) jar pimento cheese spread
1 c. grated carrots

Drain pineapple, reserving 3/4 cup syrup. Dissolve gelatin in hot water. Add mayonnaise and pimento cheese; beat smooth with electric beater. Stir in reserved pineapple juice. Chill until partially set. Fold in carrots and pineapple. Turn into a 5 1/2 cup ring mold. Chill until firm. Unmold. Fill center with grapes or other fruit. Makes 6 servings.
