PECAN PRALINES | |
2 1/2 c. whole peeled pecans 2 c. white sugar 1 c. evaporated milk 1 tsp. almond extract 1 tbsp. butter Place sugar, evaporated milk and a dash of salt into heavy pot on medium heat, stirring constantly, about 8-10 minutes. Test in cold water. When a firm soft ball appears, lower fire. Add pecan halves, almond extract and butter. Stir quickly. Spoon onto buttered cookie sheet. Makes about 14 regular size pralines. |
