HOT BAKED GERMAN POTATO SALAD | |
1 c. diced bacon 1 c. diced celery 1 c. chopped onions 3 tsp. salt 1/2 tsp. pepper 3 tbsp. flour 1/3 c. sugar 2/3 c. vinegar 1 1/3 c. water Cook potatoes with skins on, enough for 8 cups sliced potatoes, cool, peel and slice thin. Fry bacon until crisp. Drain grease and return 4 tablespoons of bacon grease to skillet. Add onions and cook slowly until tender but not brown, add celery (which I parboiled) to onions. Mix well and add salt and pepper and sugar which I mixed with the flour. Mix well, add vinegar and water, cook until mixture boils and thickens, stirring constantly. Pour over potatoes, add bacon pieces. Bake in a 3 quart baking dish. Cover and bake at 350 degrees for 30 minutes. |
