HORSERADISH SAUCE 
3/4 c. heavy cream
1/4 c. wine vinegar
3 tbsp. grated horseradish
1 1/2 tsp. finely chopped onion
Salt and pepper to taste

Beat cream until stiff; add wine vinegar. Beat until mixture is the texture of mayonnaise; season with salt and pepper. Fold in the horseradish and onions.
