PUFFY PANCAKE 
1/2 c. flour
1/2 c. milk
2 eggs
Juice of 1/2 lemon
Pinch of nutmeg
4 tbsp. butter
2 tbsp. confectioners' sugar

Preheat oven to 425 degrees. Combine flour, milk, eggs and nutmeg. Beat lightly (lumps okay).

Melt butter in oven proof 10 inch skillet or dish. When very hot pour in batter. Bake 15-20 minutes. Should be golden brown. Sprinkle with sugar, return to oven for 3 minutes. Remove and sprinkle with lemon juice.
