EXOTIC ORIENTAL CHICKEN SALAD 
2 to 3 c. cooked, diced chicken
1 c. thinly sliced celery
1 tbsp. minced onion
1 tsp. salt
2 tbsp. lemon juice
1 c. seedless grapes
1/3 c. mayonnaise
11 oz. can mandarin orange segments, drained
1/2 c. toasted slivered almonds
6 to 8 lettuce leaves
6 pitted black olives

Combine chicken, celery, onion salt and lemon juice. Refrigerate several hours or overnight. Just before serving, add grapes, mayonnaise, orange segments and almonds. Mix well.
