GRANDMA'S CORN FRITTERS | |
4 ears corn, very large, mature 1 egg, well beaten 1 tbsp. milk 1/4 tsp. salt 1/2 tsp. sugar Dash of pepper 1 tbsp. flour, scant If using 5 or 6 ears, use 2 eggs. Prepare corn on corn scraper or grater and press out every bit of pulp with dull side of knife. Add all other ingredients (add flour only if necessary for thickening) and stir well. Drop the mixture by spoonfuls on a hot, lightly greased skillet or griddle. Turn once to brown lightly on both sides. Fritters should be the size of a tea cup with crisp edges. |
