STRAWBERRY RHUBARB SALAD 
4 c. diced rhubarb
1 1/2 c. water
1/2 c. sugar
2 (3 oz.) pkg. strawberry gelatin
1 c. orange juice
1 tbsp. grated orange rind
2 c. fresh strawberries, sliced

Combine rhubarb, water, and sugar in saucepan. Cook until tender. Pour hot rhubarb over gelatin; stir until completely dissolved. Add orange juice and rind. Chill until syrupy. Fold in strawberries. pour into 1 quart mold.
