RATATOUILLE SALAD 
3 heads Bibb lettuce
1 head Romaine lettuce
2 med. zucchini, thinly sliced
1/2 lb. eggplant
Olive oil
1-2 med. onions, thinly sliced
2 lg. tomatoes
1/2 raw green pepper, sliced
Raw mushrooms
Salt & pepper
Favorite salad dressing

Shred the lettuce coarsely. Cube the eggplant and saute quickly in olive oil. Slice the tomatoes, and then quarter the slices. Toss the lettuce and vegetables together with salt, pepper and your favorite salad dressing. Serve immediately. Serves 6.
