RATATOUILLE (RA-TA-TOO-EE) 
1 zucchini squash, sliced
1 onion, sliced
1 green pepper, slivered
Pinch of rosemary and thyme
1 cubed eggplant
1-2 sliced tomatoes
Salt and pepper

Saute onion, eggplant, and tomatoes to make a slight gravy. Add squash, pepper, and spices. Cover pan and simmer slowly for about 1/2 hour.
