TURKEY-HAM ROLLS 
2 c. boiling water
1 (6 oz.) box rice pilaf mix
1 red Delicious apple, cubed
1 stalk celery, sliced thin
2 tbsp. raisins
4 turkey cutlets (1 lb.)
4 thin sliced deli ham
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. apricot jam

1. Boil water, add rice mix with seasoning, apple, celery and raisins. Lower heat, cover and simmer for 25 minutes. Remove from heat.

2. Preheat oven to 375 degrees. Spray 1 1/2 quart baking dish with Pam. Layer turkey between wax paper, pound to flatten. Top each cutlet with a slice of ham. Spread 1/4 cup of rice mixture on each, 1/2" from edge. Fold edges over, roll from wide end, spoon remaining rice into sprayed dish. Place turkey rolls (seam side down) on top of rice. Cover with foil. Bake at 375 degrees for 30 minutes. Melt jam in saucepan. Brush warm jam over cooked rolls. Bake 10 minutes more.
