SKILLET PASTA AND VEGETABLES 
8 oz. Bow Tie pasta, uncooked
1/2 c. butter
2 tsp. elephant garlic, minced
1 lg. zucchini, cut in 1/2 inch pieces
1 eggplant, cut in 1/2 inch pieces
1 lg. red onion, diced chunky
1 tbsp. fresh basil, chopped
1 tsp. J.D.'s Magic
3 c. Mozzarella cheese, shredded

Cook pasta according to directions. Drain and set aside. In large skillet over medium heat, melt butter and stir in garlic. Cook 1 minute. Add zucchini, eggplant, onion, basil and J.D.'s Magic. Stir and cook until vegetables are tender, 4 to 6 minutes. Stir in pasta and continue cooking, stirring occasionally for 2 to 3 minutes. Stir in cheese. Cook 2 minutes so cheese can melt and serve immediately.
