TURKEY AND SAUSAGE PIE 
1/3 c. butter
1/3 c. flour
1 tsp. salt
1/2 c. chopped onion
2 c. chicken broth
1 c. light cream or evaporated skim milk
2 c. cooked turkey
1 lb. cooked sausage patties
Pepper to taste
Your recipe for cornbread

Preheat oven to 400 degrees. Prepare a roux by cooking onions in melted butter until golden. Add flour and stir, stirring constantly, add chicken broth and cream or milk. Stir in salt and cook until the sauce begins to thicken. Taste and adjust seasoning. Cook sauce until it is the consistency of a moderately thick custard.

In large oven-proof casserole starting with turkey, place alternate layers of turkey and sausage. Use pepper. Pour the sauce over the meat and bake until it bubbles vigorously. Top with your own recipe for cornbread (unbaked) and bake 25-30 minutes. Serves 8.
