BASIL TOMATOES 
1 tbsp. red wine vinegar
2 tsp. dijon mustard
1/2 tsp. each -salt, dried oregano and lemon juice
1/4 tsp. white pepper
1 clove garlic, minced or pressed
1 1/2 tsp. olive oil
3 tbsp. salad oil
3 medium tomatoes, peeled and sliced lengthwise
butter lettuce
red onion, sliced, if desired

Mix all ingredients except lettuce. Refrigerate 3 to 4 hours, then let stand out to room temperature.

Mix with lettuce just before serving.
