BASIL LINGUINE 
3 c. tomatoes, peeled, chopped, seeded or 2 (16 oz.) cans tomatoes, cut up and drained
1 (8 oz.) pkg. cream cheese
3/4 c. olive oil
1 tbsp. wine vinegar
1/2 tsp. salt
1/2 tsp. pepper
1/3 c. freshly chopped basil or 1 tsp. dried basil
3 garlic cloves, minced
Grated Parmesan cheese

In a 4 quart serving bowl, combine tomatoes, cream cheese, oil, vinegar, basil, garlic, salt, and pepper. Mix lightly. Cover. Marinate at room temperature for 2 hours. Cook linguine to al dente, as directed on package; drain. Add pasta to marinate mixture. Toss lightly. Top with Parmesan cheese and serve.
