VEGETABLE BLEND CASSEROLE 
2 pkgs. frozen vegetable blend (broccoli, carrots, cauliflower, mushroom blend types) California blend types
2 c. cooked rice
2 cans cream of mushroom soup or cream of chicken soup
1 c. mayonnaise
1 tbsp. lemon juice
2 1/2 c. grated cheddar cheese
Garlic flavored croutons

Boil vegetables until tender; drain and set aside. Spread cooked rice in a buttered 9x13 inch baking dish. Mix together soup, mayonnaise and lemon juice in a bowl. Spread vegetable mixture over rice. Top with mayonnaise mixture spread out to cover vegetables. Top with grated cheese and croutons. Bake 1 hour at 350 degrees. Serve hot.
