WASSAIL 
4 lemons
3 apples
1 tbsp. whole cloves
7 c. ale
7 c. sherry
3/4 c. sugar
1 tsp. ground cardamom, optional
4 tsp. minced fresh ginger
1/2 tsp. ground nutmeg

Cut the yellow zest from the lemons in thin strips. Squeeze the juice from 2 of the lemons. Cut apples into slices and stick them with the cloves. Put the ale in a large saucepan and heat until very hot but not boiling. Add all ingredients and heat. Stain. Reserve apple slices. Serve wassail hot with an apple slice in each cup.
