MEXICAN RICE 
1 sm. box rice (2 c.)
4 slices bacon
1 lg. onion, chopped
1 can tomato Ro-Tel
1 (1 pt.) can tomatoes
3/4 c. water

Fry bacon and crumble. Saute onion in bacon grease. Combine bacon, sauteed onions and remaining ingredients. Cook in skillet on to of stove until it pats like a pillow. Bake in a 9x13 pan, covered, at 350 degrees for 30 minutes. Fluffy with a fork.
