MEXICAN RICE CASSEROLE 
3 c. cooked rice
8 oz. cheddar cheese
1 can cream style corn
1/4 c. chopped green onion
1 can chopped drained green chilies
2 tsp. cilantro (optional)
1/2 tsp. salt
1/8 tsp. cayenne pepper

Mix and put in lightly oiled baking dish. Bake at 400 degrees for 35-40 minutes uncovered.
